For Courgette (or Zuchini) and cream cheese soup:
Creamy Courgette Soup Delicious but low calorie
- 3-4 large courgettes
- 3 medium onions
- 1 1/2 pints boiling water
- 3 chicken stock cubes (or gel pots)
- Olive oil, Salt and pepper
- Philadelphia garlic and herb cream cheese…
Chop onions and courgettes into small pieces.
Sauté in a small amount of olive oil.
Add water , chicken stock pots, salt and pepper.
Cook for approx 12-15 mins until veg is soft.
Add cream cheese.
Blitz everything with hand blender Serve with crusty bread.
