Fiona’s “secret vegetable” sauce - to get veg into kids who will not eat veg!
- 1 aubergine
- 2 courgettes
- 1 -2 large punnets of mushrooms
- Half a net of onions ( 4-5 medium)
- 4 cans of tomatoes
- 1 tub of tomato purée
- 2 large bulbs of elephant garlic ( it’s a milder flavour) if not 1 large regular bulb
- 3 large peppers
- 1 large sweet potato
- Chop all vegetables.
- Sauté in a large pot with some olive oil for about 5 mins .
- Add tomato purée and cans of tomatoes.
- Add salt and pepper.
- Leave to simmer until everything is soft.
- With an electric hand blender, blitz to a smooth paste.
- I use the medium size zip lock bags .
- 2-3 ladles is enough for a dinner for 3-4 people over pasta.
- Sauce can be used for anything really.
