Fiona’s “secret vegetable” sauce - to get veg into kids who will not eat veg!

• 1 aubergine
• 2 courgettes
• 1 -2 large punnets of mushrooms
• Half a net of onions ( 4-5 medium)
• 4 cans of tomatoes
• 1 tub of tomato purée
• 2 large bulbs of elephant garlic ( it’s a milder flavour) if not 1 large regular bulb
• 3 large peppers
• 1 large sweet potato

1. Chop all vegetables.
2. Sauté in a large pot with some olive oil for about 5 mins .
3. Add tomato purée and cans of tomatoes.
4. Add salt and pepper.
5. Leave to simmer until everything is soft.
6. With an electric hand blender, blitz to a smooth paste.

• I use the medium size zip lock bags .
• 2-3 ladles is enough for a dinner for 3-4 people over pasta.
• Sauce can be used for anything really.
